Cooking - Cookies/Candy

It would appear that a lot of us like to eat.  It’s been my experience also that a lot of us don’t like to cook, so I’ll start out with a recipe so simple that even my brother, who never cooks anything else, uses it.

You’ve probably seen these around.  My Mom got the recipe from my Grandma who got it from some lady over in some other little town down in west Georgia back in the 1960s. I've seen it called cookies, sometimes candy.

No Bake Oatmeal Candy

Ingredient List

2 Cups of sugar
½ Cup of milk
½ stick of butter

3 Cups uncooked oats (I use quick oats, but don’t use instant oatmeal - its usually flavored)
5 Tablespoons of cocoa powder
1 cup (or more) of chopped pecans

Preparation:

Heat the first 3 ingredients in a pan and stir to keep the milk and butter from scalding.  Bring to a boil for 1 minute or so.  Remove from heat and stir in the oats, cocoa powder and nuts.

Here’s where my brother and I differ on technique:  The recipe calls for dropping by the spoonful onto wax paper or foil and letting the candies/cookies cool and harden. That works if you want to share the candy.  However my brother simply lets the pan cool a little and takes a glass of milk, the pan and a spoon to the sofa and eats. Cooked the official way you get a couple of dozen candies.  My brother’s technique yields one serving – a few more if you have a spouse or children.

Enjoy!
